Favorite cold weather recipe


Hi Reader!

I distinctly remember the first time I had French Cassoulet. I was in elementary school and we were visiting a second cousin of my mother's for dinner. She was breezy and sophisticated in an oversize cozy sweater and slacks with a fire blazing in the fireplace.

We sat down to dinner and she served us each a large shallow bowl filled with Cassoulet. I'd never heard of it before and it was love at first look. White beans, perfectly cooked chicken thighs, garlicky sausages, a breadcrumb topping in a simple stew that could not have felt fancier to me.

As a grown up, having never forgotten this impactful dish, I learned true French Cassoulet, though a simple dish, is nurtured over an indulgent three day period to make it just right.

Have full respect for the process though never having three days to make anything I set out to create a shortcut recipe that kept true to all the original flavors but could be prepared in a few hours. It's my favorite dish for the cold months and I think you'll love it too.

Over the years I've received many comments on the recipe and emails from those who have tried and loved it. It always warms my heart and makes me want to make another batch!
