Dessert Bar Recipes perfect right now!

Hi there Reader!

As we start heading out of summer, baking desserts becomes fun again. And it's always a great time for making dessert bar recipes. They are thick, rich and full of flavor AND less work than cookies.

No individual scooping or rolling. All the batter bakes in a pan, cut it and you are done.

We have some favorites you'll love for summer (and other times of the year too)! They each are unique in their own way too.

Enjoy and happy baking!

Mermaid Bait Bars

These delicious bars were discovered while on a 6,000 mile road trip at a charming cafe in Alma, New Brunswick, The Octopuses' Garden. They have a wonderful origin story in the recipe post.

I fell in love with the area and the idea of the bars (who doesn't want to catch a mermaid?!). I came home to recreate them by guessing at the ingredients and received an email from a cafe employee who'd found them on the internet to share I'd recreated them almost exactly!

Hi Reader! Pass on the green beer and make this authentic Dublin Coddle instead. It's an authentic recipe I picked up on one of my many trips to Ireland and is comfort food at its best. A simple but hearty dish of potatoes, sausage, bacon and onions that is absolutely delicious! Spoiler alert: corned beef and cabbage isn't actually an authentic Irish St. Patrick's Day dish. That's right! It was adopted as such here in the U.S. (along with green beer). But we have a slow cooker and instant pot...
